Sadly, our cookies have come and gone, most of them scarfed up by that hungry Santa.

With the new year fast approaching, what better way to kick off 2019 with healthy eating? Of course, we all have that same goal at the beginning of the year to make more time for the gym and to eat healthier.

I’m hoping that these two delicious recipes help you with the latter goal.

Herbed Balsamic Chicken

Ingredients:

1/2 cup balsamic vinegar

3 Tbsp. olive oil

1 Tbsp. minced basil

1 Tbsp. fresh chives

2 tsp. grated lemon peel

1 garlic clove, minced

3/4 tsp. salt

1/4 tsp. pepper

6 boneless skinless chicken thighs

Directions:

Whisk together all ingredients except chicken. In a bowl, toss chicken with 1/3 cup vinegar mixture; let stand 20 minutes.

Grill chicken, covered, over medium heat until thermometer reads 170 degrees F, 6 to 8 minutes per side. Drizzle with remaining vinegar mixture before serving.

Pork Chops with Honey Garlic Sauce

Ingredients:

4 bone-in pork chops

1/4 cup lemon juice

1/4 cup honey

2 Tbsp. soy sauce, reduced sodium

1 garlic clove, minced

Directions:

In a large nonstick skillet coated with cooking spray, cook pork chops over medium heat until fully cooked.

Remove from heat, let stand five minutes. Combine remaining ingredients and add to pan. Cook over medium heat 3 to 4 minutes, stirring occasionally.
