Halloween is coming! This week, my class is headed to our annual field trip to Vale Woods Farm, Loretto. Now with Halloween right around the corner, here are two pumpkin recipes that are sure to frighten even the pickiest of eaters:

Pumpkin Bars

Ingredients:

4 eggs

1-2/3 cups sugar

1 cup vegetable oil

1 – 15 oz. can pumpkin puree

2 cups flour

2 tsp. baking powder

1 tsp. baking soda

2 tsp. cinnamon

1 tsp. salt

Frosting:

1 – 8 oz. package cream cheese, softened

1/2 cup butter, softened

1 tsp. vanilla

2 cups sifted powdered sugar
