From the 'Burg to Your Kitchen: The 'Stuck at Home' Edition

Fourteen days! Can you believe it?

If you’re like me, you are thinking, “Great. Fourteen days off of work! This is like a mini-vacation!” But for readers with children, it’s often frantic and crazy trying to find a babysitter on such short notice, or finding the time to entertain the kids.

I had the pleasure of watching one of my “children” (one of my preschoolers) while our daycare had shut down due to regulations. What better way to spend time with kids than making lunch in the kitchen? It has the added advantage of taking their eyes off that phone or tablet for a while.

Here are two simple recipes that are sure to delight even the pickiest of eaters and entertain the kids in my favorite room of the house, the kitchen. Of course, watch those quick-moving kids around hot ovens.

Cheesy Pepperoni Buns

Ingredients:

1 lb. lean ground beef, browned and drained

2 cups pizza sauce

1 – 3-1/2 oz. package pepperoni

4 slices American cheese

12 mini buns, split

2 cups mozzarella cheese

Directions:

Brown and drain ground beef. Preheat oven to 350 degrees F. Stir in pizza sauce, pepperoni and American cheese into browned beef. Cook and stir until cheese is melted.

Place buns on a baking sheet, cut sides up. Spoon meat mixture onto buns, top with mozzarella cheese. Bake for 5 minutes or until cheese is melted.

Pizza Pinwheels

Ingredients:

1 lb. pizza dough

2 Tbsp. mustard

1 cup chopped ham

1 cup shredded cheddar cheese

Directions:

Preheat oven to 450 degrees F.

Roll out pizza dough until 1/4 inch thick and the shape of a large rectangle. Evenly spread the mustard on the dough and sprinkle ham and cheese on top. Roll the dough away from you, creating a cylinder as you go.

Lightly sprinkle some flour on top of the rolls, and (parents) using a serrated knife, cut the roll into 1-inch discs. Place on parchment paper and bake for 12-15 minutes.

Free meals from school

Note: Regarding feeding the kids, the Williamsburg Community School District will be offering meals for kids, even though the schools are closed until at least March 27.

According to Superintendent Lisa Murgas, the district has asked the Pennsylvania. Dept of Education for permission to provide meals to students.

The district intends to serve breakfast and lunch and provide two meals with one pick-up. The pick-up will be held at the elementary building.

“During this time, all school building activities, including preschool, athletics, extracurricular activities, health services, and all other events are suspended,” Murgas said.

She said that a “complete and extensive disinfection and maintenance of our buildings will be done” during the closure.
