From the 'Burg to Your Kitchen

Another weekend of spending a day with my parents – for some people, this may be almost torture, but for my sister Julie and I, we thoroughly enjoy it. We are always brainstorming new recipes and ideas for things to eat during our weekend cookouts.

With next week being Father’s Day, we decided to celebrate our Dad a little early with some steaks, baked potatoes and corn along with these two desserts – just something extra sweet for the most important man in our lives.

Next week, our weekend cookout will be taking a field trip down to our Dad’s favorite place, Rocky Gap Casino and Resort in Maryland.

Fruit Pizza

Ingredients:

1 – 16 oz. tube sugar cookie dough

1 – 8 oz. pkg. cream cheese, softened

1 tsp vanilla

2/3 cup sugar (or Splenda)

1 – 1-1/2 cups sliced strawberries

1 kiwi, skinned and sliced in halves

1/2 cup blueberries

1 – 2 sliced bananas

1/2 tub cool whip

Directions:

Preheat oven to 350 degrees. Press cookie dough into a pizza pan, bake for 10-15 minutes or until slightly golden brown. Let cool.

Meanwhile mix cream cheese, sugar and vanilla in a mixing bowl. Fold in Cool Whip. When cookie is cool, spread mixture on top of the cookie.

Top with fruit in your favorite design.

Chocolate Peanut Butter Delight

For having a Dad who doesn’t like icing, we have to think long and hard for some sweet treats just for him. I mean, who doesn’t like icing, right?

Ingredients:

Crust:

2 cups graham cracker crumbs

2/3 cup melted butter

5 Tbsp sugar

Second Layer:

8 oz. pkg cream cheese, softened

2/3 cup creamy peanut butter

2 cups powdered sugar

1 cup heavy cream

Third Layer:

1 – 3.4 oz. package instant vanilla pudding

1 – 3.4 oz. package instant chocolate pudding

3 cups milk

Fourth Layer:

8 oz. carton Cool Whip, thawed

1-2 cups mini peanut butter cups

Directions:

Mix together crust ingredients and press into a 13x9 inch pan.

Mix together the second layer ingredients and spoon over the crust layer.

Mix together the third layer and pour over second layer.

Top with Cool Whip and garnish with mini peanut butter cups.
